Gluten-Free Speculaas

This is a fairly liberal translation from this Dutch recipe: https://www.gezondheidenco.nl/recept-glutenvrij-speculaas/ The method is partly based on the translation, but reflects my own adjustments.

  • 100g almond meal
  • 100g buckwheat flour
  • 100g butter (room temperature)
  • 75g coconut sugar, or soft brown sugar
  • 1 egg
  • 1 tsp (5ml) baking powder
  • 1 heaped tablespoon (15ml) speculaas spices (see notes)
  • salt (optional)

First up, an obvious disclaimer: this is a gluten-free recipe, provided that the ingredients are gluten-free. Check labelling/with supplier first!

From now on, the method I am recording is what I did, based on the original recipe, but tweaked as I saw fit. If you want the exact original method, put the original page linked above through DeepL, or Google Translate.

Tie back/cover hair. Wash your hands!

Pre-heat oven to 160ºC.

Blend flours, and rub in butter until you have an even mix.

Work in egg, sugar, baking powder, spices, salt (if you are using it). Mix thoroughly. (I did this with my fingers).

I found that the resulting mixture was rather wet and sticky. Another time, I’d blend in more almond meal until it became a workable dough.

Roll out dough. I did this on baking parchment in the baking tray, dusting with almond meal to stop it from sticking to the rolling pin. My test batch was about 5mm thick.

Form with molds, make shapes with cutters or, as I did, just score into rectangles/squares with a knife.

Bake 20–25 minutes.

SPICES

You could just use “mixed spice” although my partner has a jar, and it doesn’t list ingredients, so I don’t know how well it would work.

Looking at various recipes, speculaaskruiden can contain:

  • cinnamon/cassia
  • clove
  • coriander
  • ginger
  • nutmeg
  • cardamom
  • allspice
